Keep the Kitchen Sink Clean

One of my New Year’s resolutions this year is to literally keep the kitchen sink clean. Too often we say, “oh, I’ll do the dishes after this or that or tomorrow…” And you know what happens? Our dishwasher-less kitchen gets overrun with dirty dishes. Pots and pans pile up, we use all our forks in one day and the cabinets are emptied of glasses and plates. I decided I’d had enough.

Spaghetti Squash Pad Thai with Chicken

I love spaghetti squash. Why no one introduced this vegetable to me before my mid-20s is a mystery, however I am grateful for its existence now.

Typically, I cook Italian-style spaghetti squash, which makes sense because of its name. But I have learned that these noodle-like strands are really great to sub in with a variety of flavors. Enter Pad Thai.

It seems like all I read recently in the world of fitness is about how women should be lifting heavier weights. Honey Sesame Crockpot Chicken

October thru February is what I refer to as crockpot season. I look for every opportunity to throw something in a crockpot and forget about it for a few hours until my apartment is full of the rich aroma of deliciousness.

This is one of my new favorite recipes; it has just enough spice paired with a bit of sweetness and the chicken turns out oh-so tender. It’s perfect over brown rice, in a lettuce wrap or with veggies.
